Abstract: In order to compare and evaluate the technological characteristics of durum wheat varieties grown in Algeria, this study has concerned three varieties (WAHA, GTA and OFANTO) provided by the 0.A.1.C of SOUK AHRAS. Several parameters have been estimated on the grain and semolina. The analysis of results showed highly significant differences between varieties for all studied parameters.
