Abstract

بعد اكتشاف الإنسان للزراعة في بدايات العصور التاريخية، واستغلالها في تغطية حاجياته اليومية من أجل المحافظة على حياته في مرحلة أولى، انتقل بعدها إلى استعمالها من أجل المتعة وتوظيفها عموما لأغراض العلاج، وهو حال زيت الزيتون والخمور بعد تصنيعهما. فمن خلال هذا المقال، سنستعرض بدايات زراعة الكروم وتصنيعها في العالم القديم اعتمادا على المصادر التاريخية والأثرية المقدمة من طرف مهندسي الزراعة اللاتين والإغريق وعلماء الآثار، كما سنسلط الضور على إحدى الإشكاليات الأساسية لدى الباحثين، والمتمثلة في كيفية التعرف على المعاصر الموجهة لاستخلاص زيت الزيتون والخمور. After man discovered agriculture at the beginning of historical times, and exploited it to meet his daily needs in order to preserve his life at first, he then switched to using it for pleasure and generally used for processing, which is the case with olive oil and wine after their manufacture. Through this article, we will describe the beginnings of the cultivation and manufacture of the vine in the ancient world from the historical and archaeological sources provided by Latin and Greek agricultural engineers and archaeologists, and we will highlight the one of the main problems for researchers, which is knowing how to identify olive oil and wine extraction presses.
