Abstract: Our body permanently manufactures substances called "free radicals". These free radicals are sometimes manufactured in excess by our cells when our body is exposed to pollution, in the event of nicotinism or of exposure to UV rays for example. These free radicals, manufactured in excess, are particularly harmful for health. They are responsible for a premature ageing for the cells and some developments for certain diseases which can be very serious. Several plants are rich in polysaccharides. In our study we have chosen a plant of the family of the zygophylaceae the "Tetraena gaetula" which is a species very spreaded in our Sahara, it is rich in polysaccharides that have been able to extract from our experimental work a considerable amount (3.59 g, which has 2.11% of the dry weight of plant). These polysaccharides were extracted according to a well defined method and whose its polysaccharides have a strong hypoglycemic activity and anti-inflammatory already studied and determined. In our work we tried to highlight another activity of polysaccharides of this plant: the antioxydant activity. The literature has shown that these polysaccharides extract of this plant have powerful antioxidant activities.
